Taco Truck Fire Suppression Systems

Picture a large event sponsored by a municipality...say a farmer's market where an operational assembly permit is required. During the inspection, a fire inspector asks to see the safety features of a taco truck serving the citizens. Amazing! the required hood suppression system has not been serviced in 3 years. Is this a potential danger to the ciyizens....yes. Is even more of a danger when something goes south and the firer deaprtment must respond to the grease fire in the taco truck at the place of assembly sanctioned by the municipality....yes. Hence the question.
Maybe the ISO?
In order to be at an event sponsored by a AHJ insurances are mandated.
Does the IFC cover food service truck hoods?
